The pie turned out good... a little runny - so next time I'll add a bit more tapioca starch, but the flavor was awesome. Not too sweet... not too sour.
I feel lucky to have an heirloom rhubarb plant in our backyard. How awesome is it that I can go out the back door and pick the stalks to put in our pie for that night? Talk about knowing where your food comes from....
